Duties & Responsibilities
- Ensure food specifications and labor objectives meet operational and customer requirements
- Supervise production for quality and quantity while ensuring proper coding and compliance with FDA, USDA, and HACCP regulations
- Manage attendance, prepare shift paperwork, and assign staff to work areas
- Order materials and support last-minute production needs
- Prepare daily production sheets and direct staff based on operational needs and passenger counts
- Oversee food preparation and ensure proper handling after requisition from storage
- Train and retrain staff on food preparation procedures and safety standards
- Maintain cleanliness and enforce safety procedures throughout shifts
- Manage daily kitchen operations for consistency and quality
- Monitor labor scheduling and manpower planning
- Coach, counsel, and support employee performance and development
- Ensure compliance with wage and hour policies and operational procedures
- Support employee retention and reduce turnover
- Review employee roles, pay, and compliance with union agreements
- Ensure completion of required training including food safety certifications
Qualifications
- 7 years of experience as a cook in high-volume food service environments
- 1–3 years of experience as a Chef or Sous Chef
- Supervisory experience in food production, catering, or restaurant operations
- Associate’s degree in the Culinary Arts or a Culinary Arts certification preferred.
- Ability to work a rotating schedule over 55 hours per week including nights and weekends
- Ability to travel up to 25% as required
- Completion of required food safety training including ServSafe
- Bilingual Spanish a plus
- Ability to lead teams and manage multiple employees in a fast-paced environment
- Strong organizational, analytical, and leadership skills
- Ability to multitask and manage priorities effectively
- Strong communication skills and ability to provide feedback to employees
